Breakfast Buckwheat Groats

I’m a breakfast fiend. It’s my favorite meal of the day. And I like nothing more than a heaping plate of buckwheat pancakes slathered in coconut oil, Earth Balance margarine and maple syrup. Yum! But woman cannot exist on buckwheat pancakes alone. With that in mind, I decided to try out a warm breakfast cereal instead using buckwheat groats. Not only are they a good source of vegan protein, they taste pretty darned good, too!

Ingredients:
3 cups water
1 cup buckwheat groats (aka kasha)
¼ teaspoon salt

Instructions:
Heat water on stove until boiling. Add groats and salt and reduce heat to simmer groats, covered, for about 20 minutes. You want the groats to get creamy. Once done, stir in 1 teaspoon coconut oil, top with nuts, ground flax seeds, shredded coconut and maple syrup.
