Peanut Butter and Oat Bran Cookies (vegan, GF, SF)

It’s time to dust off that bag of oat bran you bought—just for fun—from the bulk bin at Whole Foods. No longer will it be the lonely, unused bag sitting in the dark corner of your pantry because oat bran’s 15 minutes of fame have finally arrived! And, oat bran will be happy to know that it gets to share the spotlight with peanut butter, a trusty companion.
½ cup Soy-Free Earth Balance margarine, melted
½ cup sugar
½ cup brown sugar
1 teaspoon vanilla
1 tablespoon ground flax
3 tablespoons water
½ cup peanut butter, smooth or chunky
1 1/2 cups oat bran
1 cup all-purpose gluten-free flour blend*
¾ teaspoon baking powder
¼ teaspoon baking soda

Preheat oven to 350 degrees. Mix margarine and sugars. Stir in vanilla, flax and 3 tablespoons of water. Mix well and add peanut butter. Add the rest of the ingredients and stir until well-blended. Make small balls and drop onto lightly greased cookie sheet. Flatten the balls slightly. For added cool factor, take a fork and run it across the tops of the cookies in a criss cross fashion. Bake for 10-12 minutes.
