I’ve had a love affair with steamed curly kale for the past year. So much so that I have steamed kale almost every day since it pairs so delightfully well with breakfast, lunch and dinner dishes. One of my favorite ways to enjoy kale is in a sandwich with other veggies and some Whole Foods brand gluten-free bread.
2 stems curly kale
½ tomato, sliced
1 small carrot, shredded
½ avocado, sliced
1 Tablespoon (or more!) Soy-Free Vegenaise
2 slices gluten-free bread, lightly toasted
Remove the kale leaves from the stem, shred the leaves and then steam them for five minutes. While the kale is steaming, lightly toast the bread and slice and shred the other veggies. Once the bread is toasted, slather on your Vegenaise and stuff in your veggies. Yum!
