Vegan/GF Cashew Caramel Sauce

So, while trick-or-treating at Whole Foods on Halloween


Yeah, we trick-or-treat at Whole Foods. We’re cool like that.


We stopped by one of the booths where Jessie, the store chef, was demonstrating a delicious Cashew Caramel Sauce that she topped on some green apples. It was such a delectable little treat that I grabbed a recipe sheet and vowed to make the recipe soon.


Oddly enough, soon came sooner than usual because I had most of the ingredients on hand–except the cashew butter that the recipe called for. I had some raw cashews though, so I figured that would be good enough.




Before you can even get started on this recipe, you’ve got to soak some shit. In order to make date paste, you have to soak ¾ cup dates in ¼ cup water. You also have to get a cup of those cashews soggy too.  Let them sit for at least an hour, if not more.


1 cup dates, soaked in ¼ cup water as noted above

1 cup raw cashews, soaked

3 tablespoons water

1 teaspoon vanilla extract

¼ teaspoon salt

Get out your hefty Vitamix or other blender. Toss in the date/water mixture. Drain the cashews and toss them in. Add 3 tablespoons water, vanilla extract and salt and blend until creamy. Spread on apples, celery or other yummy snacks.
