Creamy Broccoli Soup

It’s that time of year when you rinse the dust out of your big pots so that you can start making all of your yummy winter soups. Well, at least that’s what I do. You might spend your time watching past seasons of Breaking Bad that you rented from the library. If that’s the case, take a break every once in a while from watching Walter White “cook” up some high falutin’ meth in his roaming lab, and cook up some creamy broccoli soup that’s guaranteed not to rot out your teeth or make your skin crawl. Not only that, it’s vegan, gluten-free, soy-free, gasoline-free, Ephedrine-free, benzene and chloroform-free! It doesn’t get better than that!

Creamy Broccoli Soup
serves 4

Ingredients:
3 medium potatoes, diced
2 celery ribs, diced
3 cups broccoli florets, chopped
1.5 cups water
1 cup unsweetened rice milk (I’m diggin’ Whole Foods 365 brand unsweetened ricemilk)
1.5 Tablespoon Better than Boullion no chicken base
¼ teaspoon pepper

Instructions: Put all ingredients into pot on stove on medium heat. Cook until broccoli and potatoes are tender. Use potato masher to mash all ingredients to make the soup creamy. Otherwise, wait till it cools off a bit and stick half of the mixture in your blender to make it uber-creamy and stir back into the pot. Serve warm.
