My dear friend and colleague, Elaine Russo, publisher of the magnificent San Diego edition of Natural Awakenings magazine, recently shared this recipe with me. She thought I would appreciate it because the shake is meant to soothe the belly. And soothe it does. This creamy, smooth and filling shake is also quite delectable!
The original recipe called for 6 dates, but I wanted it a bit thicker so I added a couple more and a tad more vanilla extract. You can also add some fresh ginger if you wish. I haven’t done it yet, but plan to the next time I make the shake.
Hot tip! If you have a regular ol’ blender, you may want to soak the dates and shredded coconut in the rice milk for a few hours in the refrigerator before you make it. You’ll still have lots of yummy, chunky little bits in your shake, but the dates will break down better and the shake will be creamier.
Creamy Coconut Date Shake
1 ½ cups rice milk
1 teaspoon vanilla extract
½ cup shredded coconut
Put all ingredients in blender and blend away. If you want it really cold, stick the blender in the freezer for about 20-30 minutes. Take it back out and do one last spin in the blender and pour into a glass so you can enjoy the frank out of this drink!
