Gooey Double Chocolate Chip Cookies

I found a really good double chocolate chip cookie recipe at and made it vegan, soy-free and gluten-free. The results speak for themselves. They’re simply delicious!


1/2 cup Earth Balance Soy Free Buttery Spread

1/2 cup granulated sugar

1/2 cup brown sugar

1 ½ teaspoons Ener G egg replacer

2 Tablespoons water

1 teaspoon vanilla extract

1 1/2 cups gluten-free flour blend

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup semi-sweet chocolate chips


Preheat oven to 350 degrees. Cream the Earth Balance and sugars in a large bowl. Add everything else but the chocolate chips and stir until well-blended. Fold in the chocolate chips. Lightly grease a baking sheet. Make little balls out of the dough and put them on the baking sheet about 2 inches apart from one another. Bake for about 12 minutes. Let cool on baking sheet for 3 minutes and then transfer to a wire rack. Enjoy! Makes 2 dozen.
