I finally figured out a delectable vegan chocolate mousse (or pudding) recipe that doesn’t require any silken tofu to give it some good bounce! It’s super easy to make.
The only thing that takes a bit of time is the stirring. You’ll have to hang around the stove for a good 10 minutes or so and then stir for another 5 minutes after you take it off the stove. But believe me when I say, it’s oh so worth it!
2 T cornstarch
4 T cold water
1 cup plus 2 T cocoa powder
1/4 cup plus 2 T Earth Balance Buttery Spread
1/2 cup sugar
2 cups So Delicious French Vanilla Coconut Milk Creamer
Combine the cornstarch and cold water and stir until thoroughly mixed. Pour into a medium-sized pot on medium heat on the stove and slowly add the rest of the ingredients while stirring. Continue stirring for about 10 minutes until the mousse is a nice, thick consistency. Take it off the heat and continue stirring for a few minutes. Let cool on counter for about 30 minutes and then put in the refrigerator to cool for several hours. Enjoy!
