Chocolate Chip Pancakes (vegan/GF)

While on the quest for the perfect vegan/gluten-free pancakes, I ran across a lovely pancake recipe from one of my all-time favorite restaurants, Native Foods.

I tweaked it a bit to make the flour gluten-free and reduced the sugar since we’re adding back in a ton with those chocolate chips.

These are easy to make and rather delectable! And if you need a good gluten-free flour blend, check out the recipe I posted below.

Ingredients:

1 cup gluten-free flour
2 Tablespoons sugar
1 Tablespoon baking powder
1/8 teaspoon salt
1 cup rice milk
¼ cup chocolate chips

Instructions:

Blend all of the ingredients together and make some pancakes. You know the drill! Makes four pancakes.

Gluten-free flour blend

The flour blend below is a fabulous replacement for regular flour!

1 cup brown rice flour
1 cup white rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1.5 teaspoons of xantham gum
