Veggie Soup!

I pulled out a yummy recipe for butternut squash soup the other day but I didn’t have enough butternut squash on hand so I improvised. This soup became an instant hit in our house! It’s soooo easy to make, full of veggies, and overall just delicious in every way! Steam up some rice and add that to your soup to make it even more filling.

Ingredients:
4 cups water
½ bag frozen butternut squash
2 carrots, sliced thin
½ cup frozen corn
½ cup frozen broccoli florets
½ cup frozen cauliflower florets
a little dash of pepper
1-1.5 Tbsp Better than Bouillion No Chicken Base
1 Tbsp Earth Balance Buttery Spread

Instructions: Just put all of this together in a pot on the stove, bring to a boil, and then simmer for 30 minutes.
