Recently we attended a fabulous Indian Festival in downtown Portland with friends. While enjoying the festive atmosphere we also indulged in mango lassies. Ever since that day, I’ve been thinking about making some vegan mango lassies. This morning, I finally did it! And they turned out pretty darned good–very sweet and almost reminiscent of an Orange Julius. I’m going to share the recipe I used below, but if you like your lassie’s less sweet, I’ll offer some alternative suggestions.
Vegan Mango Lassie
- 1/2 cup SO Delicious Cultured Coconut Milk: vanilla flavor (use plain to reduce sugar load)
- 1.5 cups Rice Dream Rice Drink 0riginal flavor
- 2 cups frozen mango chunks
- 1 T sugar or agave (reduce to 1/2 tablespoon if you don’t want it that sweet)
- pinch of ground cardamon
Just blend it all up in a blender and you’ve got yourself a refreshing drink for any time of the day!
